Long before bricks were laid, our kitchen traveled where the timber was deadfall and the wind was bitter. We built our first rig into the bed of a surplus 1948 Willys Jeep, welding custom fireboxes and heavy steel flues designed to hold heat against sub-zero mountain gales.
That same mobile spirit defines every cut we serve today. We chase pure flavor across high passes, burning seasoned alpine oak down to snow-white coals that sear crusty barks onto pasture-raised meats.
No gas burners, no tenderizing powders, no compromises.
We stoke our pits exclusively with dry-seasoned alpine oak and natural lump charcoal, basting every cut with rendered animal tallow for a deep, unhurried smoke profile.
Emulsion versus Bark
Our Afghani Tikka cuts rely on a delicate lamb-fat emulsion marinade that protects delicate muscle fibers during high-temperature searing, keeping the interior meltingly tender while fat drips directly into the coals to create aromatic flare-ups.
In contrast, our long-smoke primals depend entirely on coarse sea salt, cracked black pepper, and twelve hours of uninterrupted hardwood smoke. The result is a thick, obsidian bark that seals in natural juices without relying on sugary sauces.
